Simple Cauliflower soup

Simple Cauliflower Soup

To take this soup from simple to sublime, add a dash or two of truffle salt or truffle oil to the soup when serving.

Ingredients

  • Florets from one head of cauliflower (tough core of cauliflower discarded)
  • 1 quart of water
  • Salt
  • Unsalted butter
  • Chives
  • Olive oil

Method

1 Bring 1 quart of water to a rolling boil in a medium-sized pot. Add 2 teaspoons of salt to the water (if using salted butter in this recipe, use only 1 teaspoon of butter). Add the cauliflower florets, and cook until cooked through, about 4 minutes. Use a slotted spoon to remove florets to a bowl. Reserve cooking water.

2 Working in batches, fill a blender half-way with cooked cauliflower, add enough cooking water to the blender bowl so that it comes up a quarter of the way. Purée until smooth. You want the consistency to be that of soup, so if you need to add more water, do so. For each blender batch, add salt and butter to taste (about 1/2 teaspoon of salt, and about a tablespoon or more of butter for each blender batch). Since you are using only lightly salted cooking water for a base, not stock, you will need to salt this more than you would otherwise.

3 Serve immediately into bowls. Drizzle olive oil over the top and sprinkle with chopped chives.

They are out.... Kids that is. School is over. 74 days till it goes back ;) but who is counting! LOL

We'll have our annual meeting at Tim Hortons over Icecaps to plan our summer. I do love having them home, but I'm always happy (very happy) for September to be here! ;)

picnic

We had our first picnic of the season!!!! At Waterloo Park today! Fantastic day! Then we walked through the outdoor Kids Art festival. They got to paint a car (real full size car lol), design and make their own ties, and do some painting art on paper. There was all kinds of cool acts/shows going on too! Fun day :)

No photos, because I left the camera at home :( I didn't realize the art show was going on!!! Otherwise I would have brought it!

I did however have it at my Grandparents 60th Wedding Anniversary party on Saturday night! I will post pics of that later!

We made it...

The kids I made it through this week in one piece ;)  Actually they were great for me and thanks to everyone who helped me out.  I had friends take Alex to one of his ball games, then a sitter in for the other.  Teenage sitters are great! I'm glad Tim is home now.

Busy Saturday.  We got 3yrd worth of black mulch and did our flower beds!!! Yep pics to follow!  They look FANTASTIC!!! I love them!  I did some shopping for gifts of parties we are going to soon and some clothes shopping for me :)  I needed a new dress and shrits/skirts for the summer!  Ones that fit!!! :-) I love loosing weight! lol   Then last night we had an early bday for Alex up at Tim's parents place.  It was nice too! 

Today its clean the house, relax, scrapbook kind of day :-)

Marvelous Mondays....

Why do some people hate mondays so??? Back to work I guess. You know what if you hate the thought of you going to your job every monday, maybe its time for a career switch??? ;-) lol  Just saying!  

I'm a single parent a bit this week.  Tim flew out west for a conference for work and my back up which is my parents are in Ottawa on holidays.  Its all good.  Alex went to baseball tonight with friends, that way I can get Benny to bed at a good time!!!

We just finished making some banana chocolate chip cake :)  We're off to play a board game till it cools and we can sample it!
